How to Prevent an Email Account from Linking to the Notes App on an iPhone
Open your iPhone's Settings., Scroll down and tap Mail., Tap Accounts. , Tap the account you want to unlink from Notes. , Disable the Notes switch., Tap Delete from My iPhone.

You can find the Settings app on one of your Home screens.

Step 2: Scroll down and tap Mail.
You'll find this in the fifth group of options.
On older devices, this may be labeled "Mail, Contacts, Calendars."
