  1. Step 1: Test your oven to make sure it can maintain a temperature of 140°F (60°C).

A gas oven might not be able to maintain such a low temperature, but it could work by using only the pilot light while an electric oven will need only the bottom element.

You may have to disconnect the broiler.
  2. Step 2: Place an accurate thermometer in the rear of the oven

Set the oven thermostat to 140°F (60°C). , Place the racks on baking trays that allow at least 2 inches (5.1 cm) of space between the trays and the oven wall. ,, Be sure to place the fan so that it cannot blow out the pilot light on a gas stove. , Sprouts should dry in 6 to 8 hours, depending on humidity. , After that, lower it to 120°F (49°F) for the remainder of the drying time.

This is to avoid the danger of burning which rises as the moisture content of the sprouts is lowered.
  3. Step 3: and make sure it is easily visible.

  4. Step 4: Arrange the sprouts in a single layer on wire cooling racks covered with cheesecloth.
