  1. Step 1: Use about 2 bitter melon per person.

    Peel and seed them.

    Remove as much of the outer green skin as you can because that is what makes them bitter. , It depends on you. , Add one tablespoon of salt to the water, which will remove the remaining bitterness.

    Leave them to soak for 15-20 minutes. , you will hear little pops as the mustard seeds rupture.

    Then add cumin, asafoetida (Vandevi) and one teaspoon of red pepper. , Mix them well.

    Cover with a lid for 4-5 minutes. , Mix well. , Keep on checking whether it becomes soft or not.
