Step-by-Step Guide

Step 1: Sift 2 to 3 cups of wheat flour into a bowl.
Add the gram flour, all purpose flour, followed by 1 teaspoon of oil, the ajwain, a pinch of salt and a pinch of baking soda.
Add water to the ingredients in the bowl and knead it to make a soft dough.
Once done, keep it aside for 15 minutes. , Marinate it by adding the turmeric powder, red chilli powder, 1 teaspoon of salt and around 2 teaspoons of water.
Mix it well and keep it aside., Once hot, gently slide the marinated brinjal slices and fry them until the color changes to light golden in color.
Once fried, take out and place on a separate plate.
Remove the excess oil using paper towel or tissue paper., Take 2 puris at a time.
Place one puri on a flat surface and add fried brinjals on the top of the puri, followed by adding slices of cheese.
Cover the stuffing with the second puri.
Repeat this for the remaining puris., Take a deep pan and heat around 4 to 5 teaspoons of oil.
Once the oil is hot, then gently slide the stuffed puris or kachoris from the side.
Fry on a medium low flame (heat).
Flip the puris so that they wll be cooked from the other side as well.
Fry them for around 4 to 5 minutes, until the color of the kachoris turns a golden brown.
Repeat this for the other stuffed puris/kachoris.,, Now the delicious, mouthwatering cheese baingan ki kachori is ready.
Serve with tomato sauce or coriander chutney.
It goes very well with hot tea too. -
