  1. Step 1: Cook the chicken.

    Heat the oil in a frying pan over a high heat.

    Place the chicken in the pan, season with salt and pepper and cook for 3 minutes.

    Turn over and cook for a further 3 minutes.
  2. Step 2: Slice the chicken breast.

    When the chicken breasts are cooked, remove from the pan and cut into 1 centimeter (0.4 in) slices.

    Leave to rest. , Place the avocado, lemon juice, salt, pepper and mayonnaise into the food processor and process until smooth.
