Step 1: Pat the chicken dry with paper towels.
This will help promote a better sear later on. -
Step 2: Season the chicken with salt and pepper.
(You can add your own spices if you want.) , Safflower is recommended as it has a light taste and a high smoke point so it will not burn easy. , This will enhance the flavor of the dish and the texture of the meat. , Bring to a slow boil. ,,,,,, (Using two forks works quite well.) , (The size does not need to be consistent.) ,,, The more eggs are added the thicker the soup will be. ,, Add at least 5 cups of hot broth to the egg mixture and continue to whisk as you do so.
Slowly incorporating hot broth while mixing will prevent the egg from cooking too fast and will keep soup smooth. ,,, -
