Step-by-Step Guide

  1. Step 1: Prepare your work area.

    Lay out the "Things You'll Need" listed below, along with all ingredients, in a clean kitchen area. ,,(Hint: cutting them to the length of the canning jar makes it easier to pack the jars later.),,,, Add two cloves of peeled and sliced garlic to them and bring them to a boil until all the salt is dissolved., (carefully!),,, Leave a 1⁄2 inch (1.3 cm) of "headroom" in the jar.

  5. Step 5: Set your boiling water canner on the stove and get your water boiling.

  6. Step 6: Sterilize the jars you intend to use in a boiling water bath for around 10 minutes.

  8. Step 8: mix your vinegar

  9. Step 9: water and salt together in a separate pan.

  10. Step 10: Remove the pint jars from the boiling water bath.

  11. Step 11: Place a sprig of dill and any pepper into the bottom of the jar.

  13. Step 13: leaving a half inch of "headroom".

  14. Step 14: Ladle the hot vinegar/water/salt mixture over the beans until they are covered.

  15. Step 15: Place a lid on the jar and snug it down with the ring.

  16. Step 16: Place on the canning rack.

  17. Step 17: When you have completed packing all the jars and topping them off with the vinegar mixture

  18. Step 18: place all the jars on the rack and return the rack to the boiling water in the canner.

  19. Step 19: Boil the jars in the hot water bath at a simmer (not a rolling boil) for 5 minutes for crisp pickles

  20. Step 20: longer for softer pickles.

  21. Step 21: Remove the jars from the water and allow them to cool on the rack or on a towel placed on the counter top.

  22. Step 22: Allow 3 days for the vinegar mixture to thoroughly penetrate the beans before opening for consumption.
